No, I do not offer collectors on smokers. On a well-made smoker the differences between a collector and the elbow are negligible. The collector does a good job at gathering the air, but the transition to the stack is a hard 90 degree angle. The elbow is a much smoother transition into the stack. I build my smokers to have smooth air flow from the firebox to the stack, the function as well as the aesthetic, of the elbow is my preferred choice.
The deposit amount is 50% of the total build cost.
On larger smokers, 250 gallon and up, there is no baffle plate. On smaller backyard models there is a baffle plate installed at the firebox opening into the cook chamber. It is a simple design that breaks up the intense heat coming from the firebox allowing the air to flow up quickly while still allowing less intense heat to flow into the cook chamber from the bottom side. This creates very even heat throughout the cook chamber without sacrificing grate space.
